Squid, Tokwa't Baboy

One of my experiments that turned out awesome! I love Tokwa't Baboy especially when paired with Lugaw. I used to remember myself always eating Lugaw Tokwa't Baboy at Lugawan ni Ompong in Malolos, Bulacan during my College Years with Millet, Marrissa, Ganda, Lon, Jr and Dita. I can safely say they have the best porridge in Bulacan. What makes this recipe extra special is the fried squid incorporated. 

Ingredients:

Fresh squids, Tofu (Tokwa), Pork, Shallots (White Onion) Red Onion, Pepper, Lemon Grass, Salt, Vinegar, Egg, Flour, Soy Sauce and Fish Sauce

Procedure:

1. Deep the squids into a bowl of beaten egg and then on the flour-salt-pepper mixture.

2. Heat pan and oil. Make sure it is hot before putting the squids onto it to avoid sticking.

3. Stir fry the squids. Cut them into small pieces when done. 

4. Do the same with the pork and tofu. 

5. On a separate bowl, combine vinegar, soy sauce, fish sauce, salt and pepper, a small chili if you want it hot, lemon grass to enhance the flavor and a little sugar to create the sauce. 

6. On a serving plate, combine fried pork, tofu and squid. Pour in the sauce.
